vegansnacks Crispy oven-baked Potato Wedges with fresh Guacamole for good measure! 
Recipe by @xanjuschx ✨
4 medium sized yellow potatoes
3 tbsp olive oil
2 tbsp all-purpose flour
1 tsp paprika
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt (or to taste)

Instructions 💥 
Preheat oven to 425ºF/220ºC.
Scrub and wash potatoes well. Pat dry. Cut into wedges (each potato was cut into 8-10 wedges) and toss with 2 tbsp olive oil to coat (reserve 1 tbsp for the pan).
In a small bowl, stir flour, paprika, garlic powder, onion powder, and salt.
Sprinkle over oiled potato wedges and toss to coat.
Prepare a baking sheet with the remaining 1 tbsp oil. Arrange potato wedges to stand up on the potato skin side. If some fall over, no big deal!
Bake for 35-40 minutes until edges are crisp and golden, and the sides are golden.
Remove from heat and serve. Feel free to sprinkle a little extra salt here!

vegansnacks Having friends over for drinks/dinner? This is an easy pre-dinner snack to share with friends and so delicious if you like something crunchy and full of flavour....Crumbed Pan-fried Okra...you’ll need:

Fresh, young okra (I prefer the small ones for this recipe - keep the larger older ones for gumbo)
1/2 cup Asian Sesame Sauce
1/2 cup rice flour 1/2 cup soy milk
2 teaspoons light soy sauce
1 teaspoon garlic powder
1 teaspoon adobo seasoning (I used @simplyorganicfoods but you can use any seasoning you like)
Seasoned panko breadcrumbs (season with salt, black pepper, some nutritional yeast and paprika)
Neutral oil for pan frying

Wash and dry the okra. Slice in half lengthwise. Set aside. Make the batter by whisking together the sesame sauce, rice flour, soy sauce, Adobo seasoning, soy milk and garlic powder. It should be quite thick but Dip the okra halves in the batter then coat with the seasoned breadcrumbs. Heat the oil in a pan over medium heat. Make sure the oil covers the surface of the pan. Pan-fry the crumbed okra until golden and then drain on papertowel. They can be deep fried if you prefer. SASTĀVDAĻAS
• 1 glāze zemesriekstu sviesta, kam nav pievienots cukurs
• 3/4 tase brūnā cukura (var izmantot kokosriekstu vai balto niedru cukuru)
•1/4 tējkarotes cepamā pulvera
• 1 ēdamkarote maltu linsēklu (sajauc nelielā bļodā ar 2 ēdamkarotēm ūdens) Ja lieto olas, šo var aizstāt ar 1 olu. 
Pagatavošana:
1.Uzkarsē cepeškrāsni līdz 190 ° C. 
2.Zemesriekstu sviestu un cukuru sajauc kopā vidēja lieluma maisīšanas traukā. 
3.Iemaisa cepamo pulveri un linsēklas. Mīklai jābūt biezai un nedaudz lipīgai.
4. Veido ar rokām bumbiņas- apmēram 2 ēdamkarotes  mīklas katrā. 
5.Liek uz cepešpannas, apmēram 2 cm attālumā viena no otras. 
6.Katrai bumbiņai augšpusē ar dakšiņu, izveido krustu, šī saplacināšana palīdzēs tām cepties vienmērīgāk.

There's also a non-spicy version that's also gluten/dairy free. 
I haven't been to Aldi in forever and I found a load of Vegan stuff that I'll post. Not masses of gluten free stuff in my Aldi but they seem to stock different stuff in different stores.  I went to find those vegan and gluten free posh chocolatey caramel balls everyone keeps posting but there weren't any.  I'll have to try a different Aldi tomorrow.  Probably end up coming home with a dog bed, wellies,  kitchen storage and a duvet instead (damn those tempting random middle isle offers)

vegansnacks Homemade oilfree pumpkin Houmous 😍😍

200g Pumpkin
2-4 cloves of Garlic
1can chickpeas
1/2 tsp Cumin
1tsp Smoked Paprika
1/4 tsp chilli flakes 
1/4 cup water
Salt and pepper to taste
Squeeze of half a Lemon

Bake pumpkin and garlic in the oven untill it is tender. When cooked and cooled place all ingredients to blender. Blend untill smooth. Add water to make it softer (next time I would add more water than I did). You can also add tahini if you're not going for oilfree option. And serve with any vegetables or crackers you want. You can garnish houmous with any seads you have. .

vegansnacks This may not look like anything fancy, but the ingredients that make up this fudge-y, oat-y slice are added with the intention of nourishing + enhancing something extra special ~ BREASTMILK! 
If you are pregnant or nursing, you may have already heard about the incredible benefits of these ingredients. I threw a few of my favourites together to make a no-bake (it’s not raw, but you don’t need an oven) nut butter, oat + fruit bar - You could also roll the mixture into balls if you prefer, but I just love an old school slice with a pot of @loveteaofficial breastfeeding tea whilst nursing👌🏼 You will need: • 3 1/2 tablespoons of melted coconut oil
• 1/2 cup natural almond butter (or any 100% pure nut butter you prefer)
• 1/2 cup pure maple syrup or coconut nectar
• 1/4 teaspoon of good quality salt
• 1 1/2 teaspoons of vanilla bean powder (optional)
• 1/2 teaspoon cinnamon • 1 cup oats
• 1/4 cup LSA or just plain flaxseed meal
• 6 tablespoons of brewer’s yeast (always choose organic) I love The Wholefood Pantry brand by @nutraorganics • approximately 3/4 cup of oil + preservative free raisins, cranberries, chopped apricots or any other dried fruit you love.
• 1/2 sachet of rich chocolate vegan protein by @isagenixanz (optional) I just love using this for the extra satiating protein, pre + probiotics, amino acids + the chocolate sweetness without it being too sweet / stevia tasting like many protein powders are - Simply melt the coconut oil, nut butter + sweetener of choice over a low heat. Then add the dry ingredients, stirring well to make sure everything is well coated + mixed through thoroughly.

Press into a slice tin or roll into balls then refrigerate until set.

This recipe is so easy, so delicious + such a nourishing little treat for breastmilk making mummas...or anyone!

Ingredients
Blondie mixture:
120g / 4.2oz light brown sugar
200g / 7oz ground almonds
100g / 3.5oz plain flour
50g / 1.7oz margarine
50g / 1.7oz almond butter 
3/4 cup oat milk (or any plant-based milk)
1 1/2 tsp baking powder 
2 tsp vanilla extract

Extras:
9 tsp cherry jam (or sub for raspberry jam)
large handful of almond flakes
large handful of cherries (or sub for raspberries)
1/2 tsp icing sugar
.
To serve (optional)
vegan ice cream
.
Method
1.Preheat the oven to 180°C / 356°F fan-assisted and line the base and sides of a square 7-inch baking tin with baking paper.
2.Add all the blondie ingredients to a food processor and process until smooth.
3.Pour half the blondie mixture into the baking tin and smooth it out. Then evenly distribute 9 tsp of cherry jam over the blondie mixture. Pour the remaining blondie mixture into the tin and spread it out evenly. Top with almond flakes, then slice the cherries in half, remove the stones and use the cherry halves to decorate. Bake in the oven for 40 minutes.
4.Remove the blondie from the oven and leave to cool for ten minutes. Then remove the blondie from the tin and dust with a little icing and cut into 9 equal squares.
5.For extra indulgence, serve with scoop of vegan ice cream while the blondies are still warm. Yum!

vegansnacks HOMEMADE BEETROOT CHIPS | These beetroot chips were a massive family hit. Simple to make, no nasties and are super addictive to eat! -

Recipe:
Peel and slice as many beetroots as you want. Thinly slice the beetroot. Cover the thin slices in a bit of olive oil and salt in a bowl. Leave the slices for about 20mins to allow some excess water to drain. Place on a tray covered in baking paper and place in a 150c oven and cook for about 45-60mins depending how crispy the beetroot get! (Thicker slices will cook for a lot longer so when slicing try to cut them as thin as possible). -

today i had another vegan burrito bowl (this time with tofu sofritos) cause i get it for free at work, and for dinner i had ten vegetable soup from panera and a salad. it’s mid terms at school and i was craving something cold so here we are: frozen bananas, frozen peaches, frozen mango, strawberry cashew yogurt, spinach and coconut water 🌱🌿🍃
